Gluten-free Orange Cranberry Oatmeal Squares

I have tried many baked oatmeal recipe attempts, and these oatmeal squares are my favorite! It requires very few ingredients, you can make it on a Sunday as part of meal prep, and it is a bright, fresh bite no matter which season we are in. Of course, in the winter, a burst of citrus can boost your mood, so if it's cold outside where you are, get these in the oven STAT! This recipe is gluten-free, as are all of my recipes, and it requires no dairy!

Oatmeal Squares Ingredients:
1 1/2 cups GF rolled oats
1 cup almond flour
2 eggs
1 tsp vanilla extract
1 tsp baking soda
sprinkle of salt
1/4 cup honey (could sub syrup or agave)
1/2 cup milk of choice
juice and zest of 1 orange
1/2 cup craisins
Mix together oats, almond flour, baking soda, orange zest, and salt. In a separate bowl, mix eggs, vanilla, milk, orange juice, and honey.
Combine wet and dry, then stir in craisins. Spread mixture into a parchment lined baking dish and bake at 350 until a toothpick comes out clean. Baking time depends on size and material of baking dish, but likely about 30 minutes.
Cool, cut, and enjoy! Package these up and leave them in the fridge for up to 7 days, or freeze for longer lasting use.
