Gluten-free Chocolate Chip Pancake Air Fryer Cookies

Have you ever had an air fryer cookie? Well, you should! I started making them when I wanted to get creative in the kitchen without turning on my oven or using up large quantities of ingredients. I have been working on a series of air fryer cookie recipes that are small-batch, healthful, simple, and quick.
These pancake-inspired cookies are perfect for a weeknight dessert when you don't have the energy to break out your cookie sheet but still want something fresh.
Chocolate chip pancake cookie ingredients:
1/2 stick butter, softened
1 egg
1/2 tsp vanilla extract
4 tbsp natural maple syrup
1 1/2 cups almond flour
1/4 tsp baking soda
1/4 cup chocolate chips (I used dark)
Maldon salt to top if desired
You will need an air fryer and mine is amazing! (paid link)
In a small bowl, whip soft butter with a fork until slightly lighter and fluffier. We don't have time for electric mixers today! Add your egg, vanilla, and maple syrup, and mix again. The butter will be clumpy and separate from the liquid. That is okay! Add your flour and baking soda and combine with wet ingredients, mashing the clumps of butter into the dough until smooth and fully combined. Sprinkle in your chocolate chips or other mix-ins. Line your air fryer with parchment paper, and place 3-6 balls of cookie dough (it will be soft, this is normal) onto the paper.
Air fry at 400 for 4 minutes and drop to 350 for 3-4 more minutes. These cookies will have a slight delicate crunch on the outside, with a very soft, molten-like center. Sprinkle with Maldon salt and enjoy warm!
