Flourless Peanut Butter Cookies

This gluten-free recipe started as a viral TikTok video during COVID. I tried it, and tbh, it was delicious, but not perfect. Over time, I have altered the measurements, found the best ingredients to go into it, and added a few things to make them really sparkle. These are a fan favorite in my house, as they melt in your mouth, and the mix-in options are plentiful!

Ingredients
2 eggs
1 cup sugar
2 cups Skippy smooth peanut butter (Linked here) #paidlink
1 tsp baking soda
optional 1/2 tsp salt
splash of vanilla extract
1/2 cup chocolate chips or mix-in of choice (crushed Oreo cookies, toffee bits, sprinkles, crushed pretzels)
Combine all ingredients with an electric mixer, then stir in chips and form into cookie dough balls. Bake on parchment at 350 for 11-13 minutes! So easy and delicious! Tip: Avoid unrefined cane sugar or sugar in the raw here, the grains are too big! It makes for crunches of sugar in the cookies. Sprinkle with Maldon salt to complete the look (and taste)!
