Gluten-Free Dairy-Free Lemon Ice Cream Sandwiches

It's summer: let's make something refreshing, sweet, healthful, and delicious!


These were dreamed up, well, in a dream! I have tons of recipe ideas while I'm falling asleep at night. It's my most creative time of day, and I get so excited to share my ideas with family and friends in the morning. I was asked to make lemon bars by a follower, and I wanted to give them a creative spin. I tried many different delicious recipes, but when ice cream hit me, I couldn't let it go. I hope you'll enjoy these semi-homemade, summery treat!


Gluten-Free Dairy-Free Lemon Ice Cream Sandwich Ingredients:

  • Pamela's GF graham crackers

  • 1 can coconut cream (I used Trader Joe's)

  • 1/3 cup sweetener of choice

  • juice and zest of 1 lemon


Scoop the solid coconut cream, plus a small amount of any liquid in the can, into a blender. Add the sweetener and lemon juice and zest, then blend until combined. Freeze the mixture in a parchment-lined loaf pan for about 4-6 hours. Once solid, Slide the block of ice cream out of the pan and place graham crackers on top and bottom of the block. Place the block back in the pan and freeze overnight.


Cut into bars when you're ready to eat and enjoy!
